CHOCOLATE LOVERS DREAM: COCO COLA CAKE

A recipe for the popular Coca-Cola cake, made with Coca-Cola and buttermilk and mini marshmallows. This is no doubt the best cake I have ever made. My family loves it, I started making it for Christmas in 1977, been an all time favorite ever since, when ever I ask them what dessert you want mama to make it is this one.
Ingredients: 2 cups self-rising flour 2 cups sugar 3 tablespoons cocoa 1 cup Coca-Cola 1 cup butter 1 1/2 cups miniature marshmallows 2 eggs, beaten 1/2 cup buttermilk 1 teaspoon baking soda 1 teaspoon vanilla extract Frosting: 1/2 cup butter 1 tablespoon cocoa 6 tablespoons Coca-Cola 1 box confectioner's sugar,
1/2 cup chopped pecans (Toasted are better)
Preparation:
Grease and flour a 9 x 13-inch pan and set aside.
In a large bowl combine flour and sugar.
In a saucpan combine the cocoa, Coca-Cola, butter, and marshmallows; bring to a boil. Combine the boiled mixture with the flour and sugar mixture.
In a separate bowl mix eggs, buttermilk, baking soda, and vanilla; add to the first mixture. Pour into prepared pan and bake at 350 degrees for about 35 minutes, until cake tests done.
Frosting:
In a saucepan, bring butter, cocoa, and Coca-Cola to a boil. Stir in the sugar and mix well. Stir in nuts. Spread over the cake while both cake and frosting are still warm.

Wow! thanks for inviting us to your blog just in time to get our soul and body feed! We will diffinitly have to try our hand at the cake because my husband LOVES chocolate! It looks soooo good! And thanks for the spiritual food of the Psalm of Summer post, it is a little fun but sadly, a whole lot true for a lot of us I am afraid. In church last Sunday night the preacher preached from Matthew 5:6, the verse that says, Blessed are they which do hunger and thirst after righteousness, for they shall be filled. And he asked us, just how hungry and thirsty are we for the things of God? Your post here is yet another reminder to us that we need to get our priorities straight!
Would it be okay if I copied the Psalm of Summer from you for my blog?

I have made this very cake before and IT IS GOOD. :) Very moist.
