TASTEFUL TUESDAY

COOKIE RECIPE EXCHANGE
Lets have a Cookie Exchange with our bloggers, I will post here, and give you some cookie recipes, then you post and give us a recipe too, lets see how many cookie recipes we can end up with when September is over, sound like fun, well join in with me now. Well be good to have all of them for when the holiday starts, we can make Cookie Cookbooks and print off the recipes to add in our books, that is something we all can do, and have a great time in doing. Giant M&M® CookiesThe truth is that I don't like to buy anything from a bakery; it justdoesn't taste good to me.
Ingredients:2 sticks margarine or butter softened
2 c. brown sugar, loosely packed
2 large eggs
1 tsp. vanilla
2 1/2 c. unbleached flour
2 1/2 c. quick oats
1 tsp. baking powder
1 tsp. baking soda
2/3 c. M&Ms® plus 1/2 c. reserved
Directions:Mix together the margarine or butter, brown sugar, eggs and vanilla. Addflour, quick oats, baking powder, baking soda and 2/3 c. M&Ms®. Using alarge muffin scoop or ice cream scoop, place dough on lightly greased bakingsheets; press somewhat flat. You can only fit 4 to 6 cookies on each bakingsheet. Bake in preheated 375-degree oven for 11 minutes. Remove pan from oven and immediately press 7 or 8 of the reserved M&Ms® on top of eachcookie. Cool cookies on pan for one minute then carefully remove to papertowels; let cool completely. When cooled, wrap each cookie separately inplastic wrap and, if you like, tie each wrapped cookie with raffia for acute presentation. Makes 14 large cookies.

Grandmas Cookies
Ingredients:
1 c. brown sugar
1/2 c. margarine
2 eggs, beaten
1 tsp. vanilla
1 tsp. and a little bit of cream of tartar
1 scant tsp. baking soda
1 1/2 to 1 3/4 c. flour
1 heaping c. dates
1/2 c. walnuts that have been crushed with a rolling pin
Directions:
Combine brown sugar and margarine and cream until smooth. Add remaining ingredients. Drop by teaspoonfuls onto greased baking sheet and bake at 350 degrees for 10 minutes.

Date Bars
I think this recipe is from the back of a date box that I cut out nearly 30 years ago. It's a favorite. The bars have a buttery crumb crust and topping and taste as good as any I have tasted from a good bakery. I double this recipe at Christmas-time and use a high-sided jelly roll pan instead of the 9x13-inch pan. Just put one batch of the crumb mixture on the bottom, a doubled recipe of the date filling over this and another batch of the crumb mixture on top.
Date Filling.
Ingredients:
2 c. pre-chopped dates
2/3 c. sugar
1/2 tsp. salt
2/3 c. water
1 tsp. lemon juice
1 tsp. grated lemon rind
2 T. butter
Directions:
Heat and stir above ingredients over low heat until thickened. Cool.
Crust.
Ingredients:
3/8 c. shortening
3/8 c. unsalted butter
1 c. packed brown sugar
1 3/4 c. all-purpose flour
1/2 tsp. baking soda
1 tsp. salt1
1/2 c. quick oats
Directions:
Using the pastry attachment (or pastry cutter) of a stand mixer, blend above ingredients until crumbly. Pat half of mixture into a 9x13-inch pan. Spread cooled date filling over this and cover with remaining crumb mixture and pat down gently. Bake at 400 degrees for about 25 minutes or until lightly browned around edges. Cool and cut into squares or bars.

I finally got in and I haven't been bumped yet!!! I've benn trying for the longest time to visit.

The cookies look wonderful and I love them all. I haven't had date bars in a long time.

I'm glad I came back and tried again.
