☺TASTY TUESDAY☺

Creole Shrimp and Okra 


















Ingredients


2 tablespoons olive oil
1 green bell pepper, chopped
1 small onion, chopped
2 (14.5 ounce) cans diced tomatoes
3 cooked Kielbasa sausage, cut into pieces
1 (10 ounce) frozen cut okra, thawed or fresh if you have it.
2 tablespoons Cajun seasoning, or to taste
2 teaspoons salt
2 pounds peeled and deveined medium shrimp (30-40 per pound)


Directions


Heat the olive oil in a skillet over medium heat. Stir in the bell pepper and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the tomatoes and simmer for 10 minutes, then add the okra, sausage, Cajun seasoning, and salt. Cover and cook for 30 minutes. Stir in the shrimp and cook until they are bright pink on the outside and the meat is no longer transparent in the center, 8 to 12 minutes.

I hope you have fun making this, and it is a fun dish, if you like sea food you will love this. You can make rice and serve it over rice too, or plain however you like it. But it takes you down home to New Orleans, and piece of corn bread with it you are set. Just ask Aliene, I bet she makes this dish.

Being born and raised in Louisiana till I was 12, this is a dish is one I will make! love this kind of food! Now to find some shrimp in these here waters! I see shrimp boats off the beach now every day...XO

Ok. THAT looks delicious. I just wish I could get more of my family to eat shrimp. And okra is ALWAYS available in the Ozarks. This might have to be a date night meal for me and hubby.
