♥ MARVELLOUS MONDAY ♥

Well the weekend is over, and guess there are still those who are celebrating the 4th today, not us, we are resting from a very busy few days, but then we are older folks and that is what we do best, I love it when I have a day with nothing pressing to do. I have been out feeding and watering the chickens, I picked a few tomatoes, and give our outside dog some fresh water, it is very humid today, and by the time I came in my glasses were filled with water, and I was just a glistening, giggles, (for you that are not from the South, that mean sweating.) *☺* Well I think I am going to share my pasta salad I made for the cook out, I made a huge bowl of it and came home with very little, everyone really liked it, I make it a tad different than most folks do, so perhaps you will like it too. Now I love pasta, any shape and form, and especially pasta salad!

      Tuna and Macaroni Salad















3 cups uncooked macaroni, any kind or shape, have fun with it.
6 ounce can of white tuna in water

4 hard boiled eggs (peeled and diced)
1/2 cup celery

1/2 cup of Sweet Onion
1 small or medium Bell pepper
1 medium cucumber
1 teaspoon salt
1/4 teaspoon pepper
1 whole fresh diced tomato

In a large saucepan, cook pasta according to package directions; rinse in cold water and drain. Transfer to a large bowl; add chopped boiled egg, and all of diced veggies but tomato.
Then in a small bowl whisk about 1 cup of Mayo, and about a teaspoon of mustard, a couple spoons of sweet relish if desired, I did not add the relish. when it is all mixed well add your tomatoes and just mix lightly so not to smash the tomatoes.  Best when cooled a  few hours before serving.
I also made the Blueberry Dump Cake and took with us, it was a great hit, and many asked for the recipe, and some have made and told me it was a hit at their dinners too, one lady used a boxed lemon cake mix  and said it was really good, so my advice is to play with a recipe, add and omit what ever your family likes, then make it that way, most recipes are just for guides to give you an idea of something to make.
So these are both excellent dishes to take to your summer cookouts, and both will be a hit, make them and really enjoy, smile when you make it, and know your friends will be happy for the extra love and time you spend with it.

Mmmm...pasta of ANY kind! Funny, I actually had Tuna Noodle Casserole on my menu board for this week. Something so comfy about tuna and noodles, eh?

Yes there sure is, and it seems like something we always have on hand, we only get paid once a month so what buy at the store has to last the month, I only buy Milk, and bread, but now with the freezer I bought 4 loaves of bread not had to buy any since, yeahh and with the chickens laying now, no need to buy eggs, sure is helping, but still staying broke, thanks for sharing with us, hugs my friend.

It is so hot here and supposed to be that way for the rest of the week. I like the term "glistening" much better than sweating like a pig, which I fear is what I do! lol

I, too, will have to try your tuna and macaroni salad, Miss Barb. I made spaghetti and a sloppy salad, and a dump cake, and some garlic bread for a friend of mine and her Mom - who has Alzheimers. Tina can't cook worth a darn, and it's been a while since I've cooked a big meal for others, so it was wonderful. She loved the dump cake, and I left it with her - she told me I should sell it! LOL - yes, even though I am originally from SW OH, I have been living in KY (the south) since 1988, and consider myself a southern-gal now - so I know what glistening means! har har! Hi Barbara, We're taking it fairly easy here today also--after a big weekend. Your pasta salad looks great.... I may make it sometime... It would be great for a summer picnic.

It's extremely hot here too--even though we are up on the mountain (2000 feet up)... We don't usually have this kind of heat and humidity up here in summer. AND--we haven't had rain in a long time... We're going to get up early tomorrow and water our yard/flowers, etc.. Everything is very thirsty.

Yum Yum Yum!! That salad sounds so good...I am getting hungry...really, I am! :) What a fun weekend it sounds like you had. We haven't been "glistening" yet...it's been cool all spring. Apparently, we are to get some sun and 80* weather by the end of the week. We shall see! :)

You are so right: "most recipes are just for guides." I won't post one on my site that isn't flexible. We should be able to vary it to fit family tastes, visiting dignitaries (OK, visiting family), so I could substitute chicken for tuna. When we moved from California to Oklahoma, Daddy didn't have a job. The week before we left, my uncle caught a tuna. My aunt and mom canned it. I can barely handle water packed white chunked. Anything else takes me back to those few months we lived on tuna while Daddy looked for a full-time job. So, if I ever, ever, post a tuna recipe, you'll know it's special!
