Impossible Mexican Pie 1996
















1 pound ground beef
1 medium onion, chopped (1/2 cup)
1 envelope (1 1/4 ounces) taco seasoning mix
1 can (4 1/2 ounces) chopped green chilies, drained
1 cup milk
2 eggs
1/2 cup Bisquick
3/4 cup shredded Monterey Jack or Cheddar cheese (3 ounces)
Salsa, if desired
Sour cream, if desired


Heat oven to 400°. Grease 9-inch pie plate. Cook ground beef and onion in 10-inch skillet over medium heat, stirring occasionally, until beef is brown; drain. Stir in seasoning mix (dry). Spoon into pie plate; top with chilies. Stir milk, eggs and baking mix until blended. Pour into pie plate. Bake about 25 minutes or until knife inserted in center comes out clean. Sprinkle with cheese. Bake 8 to 10 minutes longer. Cool 5 minutes. Serve with salsa and sour cream. Makes 6 to 8 servings. High Altitude (3500-6500 ft): Increase first bake time to about 28 min.

It is another gorgeous cool day here in Georgia, my furnace is going right now.




My husband went fishing out in the Ocean with a friend, so hope they catch a lot of big reds, I love those Red Snapper and Red Bass too, hope he brings some home.

I LOVE Fall the best.
Tonight we had our COMFORT food a favorite dish I invented/copied from living is Switzerland. Made with Gruyere cheese.
I look forward to WINTERS chill and a cozy blankie, hot cider and reading my Bible by the fireplace.

Great looking recipe. And our Christmas party is traditionally Mexican -- this might make some people very happy! And I'm glad you're taking it easy. As for the questions:

Well - today I bought the snacks to take with us to the Ladies Retreat, got the last of the laundry done, bedding packed, clothes picked up from the cleaners (got Beloved Husband to buy my lunch at the Chinese Palace!!), bought him some comfort food for while I'm away (KFC original) and gave treats to about 80 AWANAs at church to night!!

Dinner? I splurged on some leftover pork roast and egg noodles -- added some medium taco seasoning and thought Mexican!!

Special needs -- yes! My sister-in-law is being evaluated for aortic valve replacement. It would be her third open heart surgery, and several doctors declined due to the risk. This is a complication from radiation that freed her from cancer forty years ago. And, for Beloved Husband's shoulder surgery next Thursday.

Mid 80's today, should drop into the 60's tonight. Cold front due, but won't lower temps much. Still "Indian summer" here.

I'm lookin forward to winter! A good frost does wonders for allergies.

My favorite season comes around every month. I love the time I'm in, whenever it is. I remember the past and look forward to the future.

This is another recipe that I'd love to try. Yum. I know I'm a bit late for prayer requests but would ask you to pray for my mom who has many health problems but said to me the other day she is having more and more problem breathing (lungs aren't strong enough). I hope you are getting better and better also :-) God bless
