Thankful Thursday











Well I am so thankful I am finally feeling better, my strength is returning, and my coughing has almost stopped; praise the name of the Lord, my throat is no longer sore either, so I do believe I am getting well, after a long battle with this, 3 weeks and so many tough days, today I am so thankful that I am able to do the things I need to get done here, doing laundry, and picking up around here.

I felt good enough yesterday to make this scrumptous pie
Coconut cream, and I got the recipe from Sandra at Keeping it Simple, it is great girl, and my dh loved it too, this is my favorite, and although it takes quite a bit of work it is well worth it. here is a photo I took before we cut it, then today after some has been eaten, also I made Tommy dodds out of the extra dough I had left over.

you roll out the extra dough, butter it well, sprinkle with cinnamon and sugar, bake, they are really tasty, and you never waste your dough. Well have a very thankful Thursday, and I know you have lots to be thankful for, just as I do, and lets all give God the honor and all the glory.

Glad you're feeling better! We had an awful stomach virus go through here, and are now getting over it. I'm so looking forward to spring and getting out in the fresh air!

Glad you're feeling better, Barbara! The pie looks so good. I used to make home made pie all the time when my boys were growing up but now that it's only my sweetie and me, I'm trying to cut back on the sweets. Gotta watch the waistline so I bake very little now. Although Bible studies do call for some goodies now and then! Thanks for sharing and have a lovely day.

Tommy Dodds is new to me -- just the name, not the making. They are always a treat. My granddaughter will love this recipe for her favorite pie. So glad you are feeling better! It's been quite a while.

Glad to hear that you are feeling so much better. I too, am getting rid of the cough. We also had a nasty stomach flu going on around here.
Your pie is so yummy!! I remember my MIL showing me how to make the Tommy Dodds. She never called them that however.

That is great news you are feeling so much better.
The pie looks fantastic.... and great you both have the constitution to get into such a lovely pie.... we have cut back on sweet things.
