Friday's Foodie
Cornbeef and

4 cups water
1 corned beef brisket with spice packet (2 pounds)
1medium head cabbage, cut into 8 wedges
2 large red potatoes, cut into 2-inch chunks
1 can (14-1/2 ounces) chicken broth
4 large carrots, cut into 2-inch chunks
1 medium onion, cut into 2-inch pieces

In a 6-qt. pressure cooker, combine water and contents of corned beef seasoning packet; add beef. Close cover securely. Turn regulator knob to pressure and select high pressure. Cook for 45 minutes.

Meanwhile, in a large saucepan, combine the cabbage, potatoes and broth. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Add carrots and onion. Cover and simmer 20-25 minutes longer or until vegetables are tender; drain.

Release pressure according to manual instructions. Remove beef to a serving platter. Discard cooking liquid. Serve beef with cabbage, potatoes, carrots and onion. Yield: 4-6 servings.

Just in time for St Paddies day dinner, those who are Irish and cook a big dinner for every one this is the one to cook.
It is so good, and will go a long way too.

Sounds like a great recipe. I am not too big on corn beef, even though I am Irish. I love making Irish Soda Bread though :)

That sounds so good! Beloved Husband just won't eat cabbage, so I never get this at home. I love corned beef and the cabbage, too. As for soda bread -- we both like that, so I guess it's a fair trade off. The recipe is a keeper for when he goes fishing and I can get the girls to come over!

I haven't done corned beef for many years, Barb, but as you say sounds like a great St Paddys Day meal. We are doing a St Patricks Day concert.
Love and Blessings,

My husband loves corned beef and cabbage--and it is one of the few things he will cook himself--every Saint Patricks day when it goes on sale we stock up for the whole year. :)
