Simple Joys Saturday















Country Roads, yep this is my road out front of our house, they had just built it up some after we had a heavy rain storm and it washed mostly away, there have been times when we could not get out of our drive way the water was rushing in so fast, but road department has worked very hard in the past ten years to take care of that problem, it is pretty smooth most of the time now, except right after a hard rain, and then it tends to be pretty bumpy. But all in all I love my dirt road, there is hardly any traffic on it, and the quiet surroundings is just wonderful in this day and time, when every thing is moving so fast all around us. I think I would like for them to pave the road, then I think all that would bring too, and I am thinking the way it is should stay...

There is nothing like a laid back Saturday, just enjoying the sounds, the smells and the sights of the day, nothing compares to the creek flowing, and the water slapping the sticks and rocks as it moves quickly down stream. Even Goldie our big dog loves standing and watching the water, and it comes between her and her pond some times, lol she is a Golden Retriever and love the water, not in the creek so much, but in the pond just up the hill and the when the creek is moving fast she stays on this side of it.



























So for now I will stay in the woods, love the serenity it brings, I have much time to be alone with God, and all his creation, what a wonderful thing to be able to look around me and know my God has created all this just for me to enjoy. What a wonderful God we serve, and to know we that are saved will be with him forever through out eternity.

Never A Dull Moment Down On The Farm

Just at Dusk last evening my husband was out working on his boat, he is putting rails around the front so when they go Flounder Gigging he will not loos his balance, he does have a equilibrium problem, so any way he is out there just working away, and BAM a snake came up and bit him, and not just once but a few times, this snake had a mouth like a gator, full of teeth, I have never seen a snake like this before. He grabbed the closest thing and killed the snake. Well we live pretty far from any where, and not knowing what kind of snake this was, I called 911, the fire Department came out in about 7 minutes, very good respond for where we live, there is a unit about 6 miles away. So by the time they got here, I had cleaned up this wound, and it had stopped bleeding, we had the snake for them to see, and he did not have any symptoms of snake bite, so evidently it was not a poisonous snake, Praising God for this, for he would of been in really bad shape in 7 minutes if it had been a venomous snake.  So you see there is never a dull moment when you live in the Country, but what we reap far out weighs the happening of bad events, we love it here, and know God's protective hand can reach way out here too, just as well as in the City, we trust him to take care of us, and we surely never live in fear, oh what a miserable time that would be, just think if we were afraid to go out and just stay inside where it seems to be safe, that would be a miserable life for any one, I could not stand it, when it rains for a few days I have to go out any how, it just makes me crazy to be inside all the time. So that is our adventure for this time, As always God protected us, and keep that ugly bad rattle snake away, if one had to bite good things it was a non poisonous one. THANKFUL THURSDAY
















So much to thank him for, on this Thankful Thursday, I just do not know where to start.

First:  I thank him for giving us a safe journey down to Jacksonville, FL today, we had to take our animals down for their yearly rabie and booster shots, get their heart guard meds too, God is so good, he just let us have a nice time of sweet fellowship, and travel, both dogs were very well behaved too, I was very proud of them both, they do not get off the farm very often so it is nice to know we can take them out in public and they do behave, that was indeed a blessing.

Second:  My orginal Barbara's Blessings came back online today, it is where I have many pages of various things, lots of family photos and my testimony of accepting Jesus Christ as my personal Savior. It has been down for about 6 months now, I figured it probably had closed down for good, and no one told me. Third: I want to thank the lord for giving to me great salvation so rich and free, it was a free gift I had to just reach out and accept it, that free gift is Jesus Christ, just accept him and he will give you his salvation, completely free, forever and eternal. John 3:16 "For God so loved the world, that he gave his only begotten son, that whosoever believeth in him should not perish, but have everlasting life".

Fourth: I thank God for my family, they are all saved, they are all healthy and they are filled with love and consideration, I praise God for that gift he he give us.

Fifth: I want to thank God for keeping me looking to him for all my needs, I take him at his word and just trust him enough to know he will keep me safe, he will take care of me, I am not trusting the government to take care of me, I am trusting the lord, he never will go bankrupt. I am afraid our government has, and I want the one who owns the cattle on the hills to care for me, and he does you know, he even tells us in his word, 1Peter 5:7 "Casting all your care upon him; for he careth for you".  He also said he would never leave me or forsake me, Hebrew 13:5 "Let your conversation be without covetousness; and be content with such things as ye have: for he hath said, I will never leave thee, nor forsake thee".

Yes he has given me many promises in his holy book, and if I read and study I will know what God wants from me, what God wants for me, and what God can do through me, that sure does makes me thankful, and sure gives lots of peace to my soul. Wednesday's Wonderful Word
















"Ye are the light of the world. A city that is set on an hill cannot be hid." Matthew 5:14


Most of the world today is filled with darkness, and most of the talk today is viewed by darkness in how the people live. But when people live for Christ, we see that vast difference in the world, how they dress, how they act, how they talk. Because our light shines in this darkness, others take notice. Are others seeing your light shine? Will they be drawn to the Father by that light? Or will they simply say, oh they live just like us, why would I want to be a Christian. God forbid, may we let the world see God's grace and love shine though our daily lives, may we reach them for Christ while there is yet time.  I always say I want to live the same when I am home as I do when I am at church, some times I do look pretty ratty, my hair a mess, and old stained and holey clothes on, but there is still something different in me, I still shine, If I ever loose that shine and that willingness to be Christ like, I hope he just says come on home, your no good to me here any more. I think many Christians have been called home early because of this very reason. When we get so much like the world around us, we just have no heavenly use, we do not have any affect on those around us, and there is no reason for God to leave us here. I must say there are times when I feel so heavy and laden, and just wish he would come get me, then he gives me a touch of his love, his strength, his power, and I have the will to face another day.  I have Rheumatoid Arthritis; the Doctor told me with in 5 years I would probably be in a wheel chair, well I sure do not want that to happen, and I do not want to dwell on that fact of being ill, I want you to see the Spirit in me,  going forward and being active, there are days I cannot hardly move, and my legs will not go much, but I refuse to lay down and quit. 1Corinthians 16:13 "Watch ye, stand fast in the faith, quit you like men, be strong."  God has left me here for a reason, I must carry out his commission and when he says lay down girl, your work is finished, then I will lay day. But, until then I will keep going, through his strength, knowing he will give me what I need to do his will.  Have a very blessed Wednesday, and a wonderful prayer meeting tonight, pray one for another, and keep each of our bloggers in your prayers too.  Let your light shine bright where ever you go. Follow the foot steps of Jesus.

Tasty Tuesday

Hi Y'all, how is everything in your life today? We are off in a bit to do some errands then back home to work some in yard.
I have to teach Jr Church Sunday, so I have been praying about what to teach, and what would hold the 
children's interest, it has been a very long time since I taught children, I have been a women's teacher for
many years now, I used to teach Jr girls SS when I first started out, and I really loved it, so we will see how God gives this week. I think I have decided on  teaching the story of  "7 Ducks in Muddy Water", it is one of my favorites,it is in 2 Kings 5 where Naaman is told by God to go dip himself 7 times in the Jordan River and he thought he was too good for that at first...The Jordan was so much dirtier than the other rivers around, and so he wanted to go to one of them, but God said, no go to the Jordan, so he finally went down to the Jordan and dipped himself 7 times in the muddy water, came up clean as a new born baby, Leprosy all gone, now that is what we get when we obey God, obedience is definitely the way to keep in God's good graces, he really wants us to be an obedient child of his, just as we expect obedience from our children, God expects obedience from his children.This  is a very good and a story of obedience to God. So yes do pray for me, that God will direct my lips and my thoughts that I may bring honor to him. Now lets look at our good recipe for this Tasty Tuesday.

Here is a good little home made ice recipe for you, it is good, and it is easy to make.

Georgia Peach Ice Cream

















Ingredients
6 eggs, beaten
3 1/2 cups white sugar
10 fresh peaches, pitted and chopped
4 cups heavy cream
2 cups half-and-half cream
2 teaspoons vanilla extract
3/4 teaspoon salt
Directions
In large bowl, mix together eggs and sugar until smooth; puree peaches in blender or food processor and stir 5 cups of puree into egg mixture. Stir in cream, half-and-half, vanilla and salt and mix well.
Pour mixture into freezer canister of ice cream maker and freeze according to manufacturer's instructions.

Marvellous Monday

How about a winning recipe for today, and little bit about our service yesterday, we had such a good day in the house of the lord, I am so happy to be part of a church that trusts God, and works for his glory. We had two saved yesterday, We have a bus ministry, there were 19 on the bus, we give God the glory for all he is doing at the little church, he is touching each of us in a special way, and giving our Pastor such a powerful Spirit to preach with boldness, and clarity, God sure is good, and he sure is pouring out his Spirit in Folkston.
This is the peach season in Georgia so how about a good recipe for Fried Peach Pies. yumyum.















Fried hand pies are a southern tradition; this one makes the most of summer peaches.
For the dough

11-1/4 oz. (2-1/2 cups) unbleached all-purpose flour
2-1/2 tsp. granulated sugar
3/4 tsp. salt
4-1/2 oz. (9 Tbs.) cold unsalted butter, cut into 16 pieces
1/4 cup plus 3 Tbs. whole milk
1 tsp. fresh lemon juice
Make the Dough
Put the flour, sugar, and salt in a food processor. Add the butter and pulse until the mixture resembles coarse meal, 8 to 10 pulses. Add the milk and lemon juice and pulse until the dough just starts to come together, 8 to 10 pulses more. Do not overprocess. Turn the dough out onto a clean work surface, gather it into a rectangle, and flatten slightly. Wrap it in plastic and refrigerate for at least 2 hours and up to 3 days.

Line a rimmed baking sheet with parchment. On a lightly floured surface with a lightly floured rolling pin, roll out the dough until it’s 1/8 inch thick. Cut the dough with a 4-inch round cookie cutter into 12 circles. (If necessary, gather the scraps and reroll once.) Shingle the dough on the prepared baking sheet. Refrigerate.
For the filling
1 lb. 2 oz. firm-ripe peaches (2 large), peeled, pitted,
and cut into 1/2-inch dice (2-1/2 cups)
1-1/3 cups granulated sugar
2 tsp. fresh lemon juice
1/8 tsp. salt
1/2 Tbs. cornstarch
1-1/8 tsp. cinnamon
Peanut or canola oil, for frying
Making the Filling
Prepare an ice bath by filling a large bowl with several inches of ice water. Set a smaller metal bowl in the water.

In a heavy-duty 3-quart saucepan, combine the peaches with 1/3 cup of the sugar, the lemon juice, and salt. Cook over medium-low heat until the peaches have softened and released some of their juices, about 5 minutes.
In a small bowl, combine the cornstarch with 1 Tbs. cold water. Add the slurry to the peach mixture and cook over medium-low heat until thickened, about 1 minute. Add cinnamon. Remove from the heat and stir to blend. Transfer the mixture to the bowl in the ice bath and cool.
Assemble the pies
Brush the perimeter of each dough round with water. Put a rounded tablespoon of filling in the center of each round. Fold the dough in half to form a half-moon shape and pinch the edges together to seal. Refrigerate, covered, for at least 15 minutes and up to 24 hours before frying.
Prepare an ice bath by filling a large bowl with several inches of ice water. Set a smaller metal bowl in the water.

Fry the pies
Combine the remaining 1 cup sugar, 1 tsp. cinnamon, and 1/8 teaspoon cayenne in a shallow bowl and reserve.
Have ready a large rimmed baking sheet lined with paper towels. Fill a 10-inch skillet (preferably cast iron) with 1/2 inch of oil. Clip a candy thermometer to the side of the pan, making sure it doesn’t touch the bottom. Heat the oil to 365°F and fry the pies in two batches until golden-brown, 1 to 1½ minutes per side. With a slotted spoon, remove the pies from the pan, drain on the paper-towel-lined baking sheet, and then dredge in the cinnamon-sugar. Serve warm or at room temperature. These pies are best the day they’re made.
