Fish, cornmeal and Hush Puppy Batter.
I love the red bass, so what I am fixing is breaded and fried red bass.
Ingredients
1 egg
1 1/2 cups water
1 cup all-purpose flour
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 pound bass fillets
2 cups crushed cornflake crumbs
1/2 teaspoon Cajun seasoning
1 quart oil for frying
Directions
In a medium bowl, beat together egg, water, flour, garlic powder, salt, and pepper. Place fish in the bowl, and thoroughly coat with the mixture.
In a separate medium bowl, mix the cornflake crumbs and Cajun seasoning. Dip the fish in the crumb mixture, and thoroughly coat all sides.
In a large, heavy skillet or deep fryer, heat the oil to 365 degrees F (185 degrees C). Fry the fish until golden brown, and flesh is easily flaked with a fork.
You can find the recipe for great hushpuppies on your Martha White Flour bag, I always add onion to mine too.
Shread some cabbage and a carrot, a little onion and make a good slaw to go with it, deep fry a few FF and walla you have a fabulous fish dinner.
Enjoy your dinner, and I use a simple Vinegar/sugar/and Mayo mixture for slaw. Fix according to your own taste. You can buy the dressing already prepared too, it is very good.

Well Barb,what are you doing?when i read your blog it is 5 am my time and you still make me hungry!!! Never heard of Hushpuppies but I imaginethey are lovely,strange how in each country we eat a little differently.Can this fish batter be oven baked? as we have not fried anything for about 10 years so was just wonddering if that would be possible,I will try it out.You are in my prayers and thoughts.Have an absolutely wonderful day and hope the chinese was yummy.Carole xx
