Thankful Thursday












I was studying these verses this morning in my quiet time, and thought I would share with you, I cannot sit long enough to really expound on it, but it says I wait patiently for the lord, that is the thrust of the verses, waiting, patiently, right now I can not wait any other way, it is in the lords hands how quick I heal and can be up and about. I am doing much better and expect to do even better daily, that is my goal and I pray that it is the Father's will also. I am waiting on him to stand me up, plant my feet on higher ground, amen, usually when I sit up I need a stack of pillows under my foot to prop up my leg, will be glad to be on solid ground again, and back in the house of God with his folks, I really miss that the most. I do have a wonderful in home Physical Therapist, she is so good, an such a great asset, she has helped in so many ways, little tips here and there. I go to get my staples out the 5th, that will be a relief too, so I am progressings. So keep praying, it is working, and I will be back full force soon, love each of you.

Home, But not up and running

Hello my dear friends, just continue to pray for me, this has been much harder on me than anticipated, they had to take more of my bone off than thought, But I am home getting better daily, it is still such a struggle to get around, this is the first time I have been able to get in here to computer, usually front room is as far as I can get, this is about 70 foot from my room, quite a chore, so funny how going to the bath is such a chore now, have to use my walker with Chuck holding onto my bet, I have a strap around my waist I keep on for easy mobility that I do not fall,you. Just keep praying, I will not be here much, I am only suppose to sit in this position for 30 minutes, so limited time indeed. Love y'all and do keep praying, I am here and praying for you, just cannot get to computer like I did, but then I cannot do anything like I did, Oh I take that back, I can pray like I did even more, hugs to All

God's Been So Good To Me


First I want to thank all of you for the very encouraging comments you have left, you have all blessed my heart, then I want to thank you for your prayers for me today. The fellowship was great, the devotional was truly inspiring, even to me, lol God is so good, he shows up and takes over, and it is a great time in him, with him, and by him, I do stand amazed some times in what he does with me, I am rather timid, and writing is great but standing in front of others and every one looking right at you, usually makes me feel uneasy, I did feel right at home today though. The food was so good, and we had so much too, all in all it was so good and a sweet time of prayer and fellowship, it was such a blessing to me.

Tomorrow is church, and I am looking forward to that, I do love going to church and worshipping the lord, he is so good, and we need to lift up the name of Jesus every chance we get, I am not
sure if I will have to miss any meetings or not, perhaps if I feel okay Wednesday and come, I will be up to going, if not I am sure Sunday.  So praise God Monday is a good day to have the surgery on, I thank you all for the prayers, and all the love you show, God bless you all very much, I will have a few days down to really pray and keep in constant touch with the lord, I am looking for ward to that too. No computer, just sweet fellowship with my lord.
 I came home give Zoie another bath, and then made my precious husband one of those Sausage rolls he loves, I will put it in the freezer and he can have them every morning while I am gone.
The kids are coming up to the hospital Monday too, and then Jim my eldest son, is going to take Zoie, our little dog, back home with him, that will be best for her, rather than leave her home alone all day with us being gone, Chuck wants to spend as much time at the hospital with me as possible, and it would not be fair to leave her alone so much, so I am happy about that too.
Oh yeah pray for brother Chuck, the Pastor asked him to preach tomorrow night, so hold him up in prayer too.

God sure is good isn't he, tell me how has he blessed you today?

Thankful Thursday


We it is a lovely day, I spent it deep cleaning, and doing laundry, yesterday I went to my class, they explained all things that will happen, I am very informed now, and feel a true peace over me, I am
assured that God's hand will be upon the surgeon's and on me, I appreciate all the prayers, and I
more than likely will not post any more before I have the surgery, so all my praying friends keep me in prayer on Monday, all I know it will be early, and I will be getting up before the day is over, now that is great, I
think, lol, my old bones would set up if I stayed in bed too long so I really was glad to hear that they will
be getting me up and about the day of the surgery. Then each day I will walk and do therapy until my goals they set for me are accomplished, then I can come home, that is the goal I want to make.

Tomorrow I will strip my bed sheets, and put all new one on my bed, then will finish doing the laundry and trying to get some meals made up for my precious husband. He is my coach and will be with me through most all things I will do, thank God for a strong and loving husband, God indeed has blessed my life.
I do want to make that good Sausage Roll for him, and freeze it, that will keep him eating for a while in the mornings. Saturday we have our ladies meeting at church, I will be giving the devotion and ask your prayer
for this also, it has been a while since I spoke in front of a women's meeting. Pray God will be glorified in all I say, and that he will lead me in my thoughts and my speech. Then of course Sunday, our day of worship, and I will not do much else that day, will kinda rest up for the big journey on Monday. So those are my plans
and my thoughts, and I do pray that each of reading will walk a little closer to the lord the next few days, and pray more, and give him a little bit more time of your life. I am indeed thankful for the blessings God gives me
daily, and I do not hesitate to say, I know that he will be with me on Monday, and his hand upon me, and his voice whispering his word in my ear, he promised me, he sail, Lo I will be with thee always, and that is in
the operating room too, amen..Have a blessed day, weekend, and I will get back to say hi to y'all as soon as I can. here is just a little goodie cause I love ya, enjoy, and God bless you real good.

Pumpkin Dump Cake




















1 large can pumpkin
1 can evaporated milk
1 cup sugar
1 1/2 teaspoon cinnamon
1/2 teaspoon ginger
3 eggs, beaten
1 box yellow or white cake mix (not Jiffy size)
1 1/2 cubes melted butter


Grease bottom of 9 X 13 inch cake pan. Combine first 6 ingredients.


Pour into pan. Sprinkle cake mix over top evenly. Drizzle melted butter over all. Bake at 350F for 50 minutes. Test as for pumpkin pie for doneness.

Yummy Tasty Tuesday Time


I had this all written out and something happened and it went to the home page and I lost all my writings, OH ME!!
Well Good Morning and I am only here a minute to post this, I have a appointment with my primary doctor to get my surgical release. Then have some last minute things to do. The Count down has begun, I have made most of my pre-registrations now, had my blood work and pre opt testing done, and going to a class tomorrow and to get my ID bracelet, so the time is nearing, but Praise God I can say I am in good hands and he will protect me in every step of the surgery and recovery. God is good, and he loves me what more could I ask for, who better to hold my hand, and the surgeons hand than the one who created  me, yes glory, I do trust in the lord. I appreciate all your kind and encouraging posts, and the prayers I
know you pray for me, thank you.

Crock Pot Cola Ham
















Ingredients
1/2 cup brown sugar
1 tsp dry mustard
1/2 cup cola (Coca Cola)
3 to 4 pound precooked ham


Directions
Combine brown sugar and mustard. Moisten with cola to make a smooth paste. Reserve remaining cola. Score the ham with shallow slashes in a diamond pattern. Rub ham with mixture. Place ham in crock pot and add remaining cola.


Cover and cook on high for 1 hour, then turn to low and cook for 6 to 7 hours.  Serves 8.

















Blackberry Roly Poly
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
4 tablespoons chilled unsalted butter plus
2 tablespoons butter melted
3/4 cup milk
1 1/2 cups fresh ripe blackberries
6 tablespoons sugar


SLICED-LEMON SAUCE:
1/2 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt
1 1/2 cups water
1/3 cup fresh lemon juice
1 vanilla bean split and scraped (or 1 tsp vanilla extract)
3 tablespoons unsalted butter
1 lemon halved lengthwise, seeded, and cut into paper-thin crosswise slices.


Preheat the oven to 350 degrees. Lightly butter two 12-inch loaf pans. Sift the flour, baking powder, and salt together into a medium bowl. Using a pastry blender or 2 knives, cut in the 4 tablespoons of cold butter until the mixture resembles crumbs. Add the milk and mix with a fork until the dough comes together.
Turn out onto a floured board and knead 4 or 5 times, or until smooth. Cut the dough in half. On a floured board, roll out half of the dough into a rectangle 8 inches wide and 1/4-inch thick. Brush with half of the melted butter. Top with 3/4 cup of the blackberries and sprinkle with 3 tablespoons of the sugar. Roll up jelly-roll style, forming an 8-inch-long roll. Place, seam-side down, in one of the prepared pans. Repeat the process, using the remaining half of the dough and filling. Bake in the pans for 35 to 40 minutes, or until the crust is firm and beginning to brown.


While the roly-poly is cooking, make the sauce: In a medium saucepan, blend together the sugar, cornstarch, and salt. Add the water, lemon juice, vanilla bean and scrapings, and stir until smooth. (If using vanilla extract, wait to add until the syrup is removed from the heat.) Cook over medium heat, stirring, for 5 minutes, or until the mixture is thick and clear. Remove from heat, add the butter, and continue to stir until melted and blended. Let cool slightly and stir in the lemon slices. Take out the vanilla bean, if using.


Remove the roly-poly from the oven and let cool in the pans for 10 minutes. Turn out onto a wire rack. Cut into 2-inch slices and serve with lemon sauce. This recipe yields 8 servings.

Note: The lemon sauce will keep for 3 to 4 days but is best served the day it is made. It will thicken when refrigerated; simply stir to loosen the sauce.

Praise God I am Home

We are back home, and it is so good to be home, we had a wonderful anniversary, and a lovely trip, but  as good as it was, I am still happy to be home. God really blessed us, we received so many cards and well wishes from family and friends.
Some filled with money even, Wow so unexpected too, our church give us a Anniversary check too, so God just poured out his blessings upon us once again, It just never ceases to amaze me how much God looks after us, and how be blesses our comings and goings.  Our daughter put a big photo ad in our local paper, and showed our wedding photo plus our current photo, wow we sure have changed..It was a blessing to see.
I am still real tired, and will be post a few photos we took.
Enjoy them, and Know I will be back and with some more news Probably Monday, God bless you all and thank you for all the well wishes and blessings you sent to us.











































































































This was a wonderful dinner of all you can eat snow crabs for me and a fisherman's platter for my beloved.
It was exceptionally good, a great place right on the river. We just totally enjoyed our time spent.

Well praise God it is Wednesday, and the day that most of us Christians go to prayer meeting, do you have anything specific you would like for me to pray for? I have several things I need you to pray about. We are leaving for a few days in the morning for a mini vacation, and a time to get away for our 50th anniversary.
We have decided to go to Tybee Island, GA it is lovely in that area, with lots to do, and lots to see, it even has a light house on the Island, if you know me at all you know my dear husband collects light houses, he has so very many from ceramic to paintings, he sings the song The Lighthouse too, it touched his heart right after he was first saved, and ever since it has been special to him. 
This will be the last post I will be able to make until probably late Saturday evening, so know you are in my prayers, and you have blessed my life by being my blogging friend, most likely I will never get to meet you but you are have touched my life. Thank you and God bless you very much this week.

I got this in an email one day, it blessed my heart, and hope it blesses your heart too.

God, WHY ME????????



The only survivor of a shipwreck was washed up on a small, uninhabited island.

He prayed feverishly for God to rescue him. Every day he scanned the horizon for help, but none seemed forthcoming.


Exhausted, he eventually managed to build a little hut out of driftwood to protect him from the elements, and to store his few possessions.


One day, after scavenging for food, he arrived home to find his little Hut in flames, with smoke rolling up to the sky. He felt the
worst had happened, and everything was lost. He was stunned
with disbelief, grief, and anger. He cried out, 'God! How could you do this to me?'

Early the next day, he was awakened by the sound of a ship approaching the island! It had come to rescue him! 'How did you know I was here?' asked the weary man of his rescuers. 'We saw your smoke signal,' they replied.


The Moral of This Story:


It's easy to get discouraged when things
are going badly, but we shouldn't lose heart, because
God is at work in our lives, even in the midst of our pain
and suffering. Remember that the next time your little hut
seems to be burning to the ground, it just may be a smoke
signal that summons the Grace of God.


P.S. You may want to consider passing this on, because you never know who feels as if their hut is on fire today.


If you can't be grateful for what God has given you, look around you
and be grateful for what He's protected you from...... Amen God is good all the time..

Cobb Salad with Fresh Herbs


Yields 6 large dinner salads.
INGREDIENTS
2 Tbs. mayonnaise
1 tsp. Dijon mustard
Kosher salt and freshly ground black pepper
3 large boneless, skinless chicken breast halves
(7 to 8 oz. each), tenderloins separated if still attached
2 heads Boston lettuce (about 12 oz. total), trimmed, torn into bite-size pieces, washed, and dried
1-1/2 cups lightly packed fresh parsley leaves, torn if large
3/4 cup lightly packed mint leaves, torn if large
1 recipe Lemon Vinaigrette
3 large avocados
2-1/2 cups (about 1 lb.) halved grape tomatoes
1 heaping cup (6 oz.) crumbled Roquefort
2/3 cup toasted pine nuts
12 slices bacon, cooked, cooled, and crumbled
1/2 cup sliced chives (3/4 inch long)


Grill the chicken: Heat a gas grill to medium high. In a mixing bowl, combine the mayonnaise, mustard, 1/2 tsp. salt, and 1/4 tsp. pepper. Add the chicken and toss to coat. Grill until well marked and cooked through, 4 to 6 minutes per side for the breasts, and 2 to 3 minutes per side for the tenderloins. Let cool and cut into small dice.
Assemble the salads: Set 6 large dinner plates on your counter. Combine the lettuce, parsley, and mint in a large mixing bowl. Toss with just enough of the vinaigrette to coat lightly, 4 to 5 Tbs. Season with a little salt and pepper and toss again. Divide among the plates, arranging the lettuce in a circle with a small hole in the center.
Peel, pit, and cut the avocados into medium dice and toss them in a medium bowl with 2 Tbs. of the vinaigrette. Combine about a sixth each of the avocados, tomatoes, Roquefort, pine nuts, and chicken in the mixing bowl. Season with a little salt and pepper and toss with about 1 Tbs. of the vinaigrette. (You won't use all the dressing.) Mound the mixture in the center of a salad. Repeat for the rest of the salads. Sprinkle on the bacon and chives and serve.

Serving Suggestions
Pair with Bruschetta with Rustic Green Olive Tapenade.

Peach and Blueberry Galette


This rustic fruit tart is the perfect vehicle for ripe summer blueberries and peaches. The crust is free form—it just gets folded over the filling and then baked. Serve warm with a scoop of vanilla ice cream or a dollop of crème fraîche.

Serves 8 to 10

What You'll Need For the crust
6-3/4 oz. (1-1/2 cups) unbleached all-purpose flour, more for rolling
1 Tbs. granulated sugar
1/2 tsp. table salt
5-1/2 oz. (11 Tbs.) unsalted butter, chilled and cut into 1/2-inch dice
1 large egg yolk
3 Tbs. whole milk
For the filling
1 lb. peaches, peeled and cut into 1/2-inch slices (about 2 cups)
3/4 lb. blueberries, rinsed and picked through (about 2 cups)
1/4 cup light brown sugar
2 Tbs. unbleached all-purpose flour
1/4 tsp. ground cinnamon
Pinch of table salt
1 large egg, beaten
2 Tbs. sugar

Directions


Center a rack in the oven and preheat to 350 degrees F.
To make the fruit filling, combine all ingredients in a large bowl and toss gently, making sure that the cornstarch is coating the fruit. (This will prevent too much juice from leaking out while the galette bakes.)

Remove the dough from the refrigerator and place on a sheet of parchment paper. Starting at the center of the dough, roll out, forming a 14-15-inch wide circle. Place the dough with parchment paper on a baking sheet. Add the fruit mixture to the center of the dough, leaving a 2-inch border. Fold the border over the filling, overlapping where necessary and pressing gently to adhere the folds.

Lightly whisk the egg white and milk in a small bowl. Brush dough with egg wash, and sprinkle with sugar. Bake for 1 hour, or until crust is golden brown and the filling is bubbly.

Transfer the baking sheet to a wire rack to cool for at least 20 minutes. (Cutting it too quickly will cause the dough to crack). It's best served at room temperature or slightly warm.

Optional garnishes include vanilla ice cream, a dollop of creme fraiche, or freshly whipped cream.

Happy Labor Day

















The first Monday in September, observed as a holiday in the United States and Canada in honor of working people.



Labor Day is observed annually in honor of working people on the first Monday in September in all the states and territories, including Puerto Rico and the Virgin Islands. The day was originally conceived in 1882 by Peter J. McGuire, the radical founder and indefatigable warrior of the Brotherhood of Carpenters and Joiners of New York. On 8 May, McGuire proposed to the New York City Central Labor Union that the first Monday in September, because it fell midway between the Fourth of July and Thanksgiving Day, be set aside annually as a "labor day." His effort bore fruit on Tuesday, 5 September 1882, when workers in New York City held a large parade and a festival sponsored by the Central Labor Union and the Knights of Labor. In 1884, the New Yorkers held a parade on the first Monday of September and designated that day as the annual Labor Day. The agitation in New York City was soon followed by labor unions in other states, which staged vigorous campaigns in their state legislatures for the establishment of Labor Day as a legal holiday. Their earliest victories were in Oregon and Colorado, where Labor Day was declared to be a state holiday in February and March 1887, respectively. The next year the American Federation of Labor passed a resolution for the adoption of a Labor Day at its St. Louis, Missouri, convention. Thirty states had followed the lead of Oregon and Colorado by the time the first Monday in September was made a national holiday by an act of Congress, with the bill signed into law by President Grover Cleveland on 28 June 1894. In the early twenty-first century, Labor Day parades, rallies, festivals, and speeches were still organized by labor unions across the country and often supported by political leaders. Because of the shrinking popular base of traditional labor unions, however, most Americans tended to regard the day merely as the finale of a long summer of fun in which hot dogs, barbecues, and picnics reigned.
